Number two of Breezy Mama‘s Hospital Series is this scrumptious dish using quinoa as it’s main ingredient. If you haven’t heard of quinoa, don’t worry, I didn’t know too much about it either. Apparently, it’s super easy to cook, and though it may remind you of rice, it’s not, in fact it’s much healthier. Deanna, who made this recipe for my family, has this to say, “The dish we prepared for you is a really easy one to prepare and good for you as well. The quinoa is a complete protein and I am using it in place of rice and pasta on occasion. You can get these items at any grocery store but I bought everything you see below from Trader Joe’s (with the exception of the veggies-I get them from an organic farm–I think they hold so much more flavor.)
