When I was little, my mom bought a little deep fat fryer–something like the Fry Daddy of today. She was so excited to get it (which was a bit odd since she normally didn’t fry things) which caused my brother and I to be excited as well since we had visions of doughnuts and corn-dogs in our heads. But what she really used it for was eggplant–as in disguising it. My brother wasn’t very fond of his veggies, so she used to fry eggplant and tell him they were french fries. As a result, he’d gobble them up. Fast forward 30 years and here I am, with my own Fry Daddy, making my own fried eggplant. My mother-in-law gave me this recipe–it reminds my husband of his own youth. Fry it up!
