So there I was, staring into the fridge and wondering what in the world I was going to cook up for dinner. I was looking at mushrooms ready to go bad, a half a jar of marinara sauce, and some leftover spinach. Hmmm I thought, how about some sort of Parmesan Chicken? And so there you have it, Parmesan Chicken a la Alex (which by the way, my husband won’t stop giving me a hard time for–the atrocity of naming a dish after myself!). Enjoy!
Serves 3 – 4 (or 2 adults and 2 kids).
- 2 breasts of chicken, filleted (so you have 4 pieces total)
- 1 cup Parmesan cheese, shredded
- 1 cup spinach, chopped
- 1 cup mushrooms, sliced
