When I was growing up, every summer my family and I would go to the Starlight theater, which was this outdoor theater in Balboa Park, San Diego. Before the play, we’d picnic on the grass, and after the play, we’d sip on Mexican Hot Chocolate that my mom had poured into thermoses. This was about the only time we’d drink this heavenly goodness–because it’s kind of a pain to make. Mexican Hot Chocolate comes in actual chocolate form (like a candy bar). You put it in the bottom of the pan, add the milk, and as the milk heats up and melts the chocolate, you insert a wooden “frother”, and move it between your palms to mix everything together. You can try shortcuts (i.e. microwave and spoon), but it’s really not that good. Until now.

Spaghetti with meat sauce is one of those comfort meals that reminds me of my youth. I loved my mom’s recipe, and would be so excited to sit down at the table and find a heaping bowl of it at my place. I am a huge sucker for grilled cheese sandwiches. Gooey, ooey and completely blissful, I love one on a cold day with a bowl of hot tomato soup. So when one of Breezy Mama‘s favorite bloggers, Kathy Strahs of Panini Happy, asked if I wanted to test out some recipes for her upcoming The Ultimate Panini Press Cookbook, I knew I was going to be in for a good treat.
