We had a girl’s weekend up at a friend’s house, and in the evening before bed, our host was telling us that she was going to make “yummy smoothies” for breakfast the next morning. I wrinkled my nose—I’m a bacon and eggs type of girl, and a smoothie wasn’t going to cut it. I make a smoothie in my Vitamix every morning–it’s an easy way to get in all my fruits and veggies. And though I don’t mind the taste of kale, spinach and chard, sometimes it gets a little old. Veggie Mint Chip Ice Cream

Yes, you read that right. “veggie ice cream.” After the kiddos and I were entranced by watching a Vitamix road show guru make veggie ice cream at our local Costco, we decided to come home and make our own. Yes, you read right again. The KIDS wanted to make veggie ice cream. It was THAT good. So I tinkered and added and mixed, and came up with the following recipe, to which my daughter said with delight, “This tastes better than REAL mint chip ice cream.” That’s one for the record books.

Makes approximately one half gallon.

Creamy Curried Cauliflower Soup

soupRecently, my friend Gretchen had a few of us girls and the kids over for a late afternoon play date. Amongst drinks, appetizers and laughs, she asked if we were ready to eat. Not knowing that we adults were going to be the benefactor of one of Gretchen’s fabulous meals, I quickly nodded, “Yes!” She went to the kitchen and started to ladle up some soup–and when I say “some soup,” I should say “beautiful, glorious, divine soup,” because indeed, that’s what it was. file00098103405I love myself some pesto, but I hate the feeling in my stomach after I eat it. Laden with oil, it makes me feel like I just devoured a extra large tub of movie theater popcorn. But pesto is so easy to make, and so versatile, that I found myself on a quest for a healthy version. And I found one! Delish Dish: Mexican Hot Chocolate, the Easy Way

When I was growing up, every summer my family and I would go to the Starlight theater, which was this outdoor theater in Balboa Park, San Diego. Before the play, we’d picnic on the grass, and after the play, we’d sip on Mexican Hot Chocolate that my mom had poured into thermoses. This was about the only time we’d drink this heavenly goodness–because it’s kind of a pain to make. Mexican Hot Chocolate comes in actual chocolate form (like a candy bar). You put it in the bottom of the pan, add the milk, and as the milk heats up and melts the chocolate, you insert a wooden “frother”, and move it between your palms to mix everything together. You can try shortcuts (i.e. microwave and spoon), but it’s really not that good. Until now.

Delish Dish: Veggie Spaghetti with Meat Sauce

I loved my mom’s recipe, and would be so excited to sit down at the table and find a heaping bowl of it at my place.
