The beauty of this dish is that is has unique flavors that adults love such as the roasted red pepper falafel, but as it is in pizza form, kids enjoy it, too.

Veggie Patch Roasted Red Pepper Falafel Flatbread Pizza
A Middle Eastern twist on everyone’s favorite comfort food; use pita pockets to make mini pizzas for entertaining.

Total Time: 25 minutes
4 Roasted Red Pepper Falafel
2 naan breads
2 tablespoons hummus
½ cup thinly sliced red onion
¼ cup diced tomato
4 teaspoons sliced kalamata olives
4 teaspoons goat cheese
½ cup thinly sliced romaine lettuce
1 teaspoon freshly chopped parsley leaves
1 teaspoon freshly chopped oregano
1 teaspoon red wine vinegar
Pinch kosher salt
Red pepper flakes (optional)
Instructions:
Preheat the oven to 400 degrees.
Dice Roasted Red Pepper Falafel into about 8 pieces each. Set aside.
Place naan breads bubble side up on a baking sheet. Spread 1 tablespoon of hummus over each bread. Evenly divide the onion, tomato, olives, goat cheese and falafel on top of each pizza and place in the oven. Bake for 10 to 12 minutes, until crusts are crisp and browned and cheese is beginning to melt.
In a small bowl combine the lettuce, herbs, vinegar and salt.
Remove pizzas and top each with greens and red pepper flakes (if using). Slice and serve.
