Emma, mama of two daughters ages 6 & 8, from Hyde Park, Vermont, and blog manager at Butternut Farm Mountain, has taken on the Breezy Mama challenge to cook something both parents AND kids will love! Get her recipe for Savory Cheddar Waffles!
Emma developed this recipe when trying to come up with healthy breakfast for dinner options that BOTH she and her kids would like. She also wanted to develop a recipe that they could have fun making together that wasn’t super sweet. Everyone in her household LOVES waffles and cheese so she decided to combine the two and add a little spinach and a touch of maple into the mix. This is how the Savory Cheddar Waffles were born! It was love at first bite for her kids and they always say, “Can we make these for dinner again tomorrow, Mama?” And she always says, “Sure!”
- 1 cup Butternut Mountain Farm Pancake Mix
3/4 cups Water
1 Egg
1 1/2 tbsp Olive Oil
1 tsp Minced Garlic
3/4 cups Chopped Baby Spinach
1/3 cups Freshly Grated Cheddar Cheese
Instructions
- Preheat and grease the waffle iron.
Stir the pancake mix and water together. Then whisk in the egg, oil and garlic. Whisk until you no longer see dry flour. Do not over-mix.
Fold in the spinach and cheese.
Let sit for 2-3 minutes, then pour ½ of the mixture into your waffle maker and lightly spread if needed.
Cook on medium for a lightly crisped exterior.
Remove and serve immediately with desired toppings.
