I came up with this waffle recipe shortly after reclaiming my life- I
decided I was going to get to the bottom of my daughter’s behavioral
challenges and the first thing I wanted to try was adjusting diet. I
removed gluten and dairy and still wanted to be able to serve the same
yummy food without having a battle. Additional bonus: they are much more nutritionally sound than traditional waffles which is a big priority for me! My kids love eating them (‘Yummy!) and ‘taking care of their bodies’. They also love being able to reheat them in the toaster oven all by themselves!
Step 1: Combine all ingredients in order listed in the food processor. Blend until smooth.
*If you do not have a food processor, you should mash the banana by hand
with a fork or potato masher, mix the eggs and combine with other wet
ingredients, combine dry ingredients, and finally combine the two
mixtures until thoroughly combined. The batter will be slightly lumpy
because of small pieces of banana. This is ok!
Step 2 :Cook waffles according to the directions of your waffle maker.
Be sure not to overfill- they do get larger when cooking! These can be
frozen and toasted as needed for an easy breakfast, lunch, or dinner!
