Daphne’s BLAT Sandwich

Daphne, a mom of FIVE (the dad is her ex Keenen Ivory Wayans),who  lives in Los Angeles, California, and blogs on her site www.daphnewayans.com, has taken on the Breezy Mama challenge to cook something both parents AND kids will love! Get her recipe for BLAT (Bacon, Lettuce, Avocado, Tomato) Sandwich!

INGREDIENTS

2 slices white sandwich bread, toasted

2 romaine lettuce leaves

1/2 avocado, thinly sliced

6 arugula leaves

Dijon mustard

1 vine-ripe tomato, sliced 1/4 inch thick

2 slices of bacon of choice (pork, turkey or tempeh)

Coarse salt

Freshly ground pepper

STEP 1

Lightly toast bread. Toast one side of the toast in bacon fat in the pan and spread with Dijon. Arrange lettuce on top with arugula and tomato. Season with salt and pepper. Top with bacon. Spread remaining slice of toast with mayonnaise; place avocado slices on the toast. Place mayonnaise side down and cut diagonally. Serve immediately.
