Veggie Mint Chip Ice Cream


The kids give this veggie ice cream a thumbs up!

Yes, you read that right. “veggie ice cream.” After the kiddos and I were entranced by watching a Vitamix road show guru make veggie ice cream at our local Costco, we decided to come home and make our own. Yes, you read right again. The KIDS wanted to make veggie ice cream. It was THAT good. So I tinkered and added and mixed, and came up with the following recipe, to which my daughter said with delight, “This tastes better than REAL mint chip ice cream.” That’s one for the record books.

Makes approximately one half gallon.


  • 1 1/2 cup coconut milk
  • 2 teaspoons mint extract
  • one generous  handful of “power greens” blend (You can find this almost anywhere, with the bagged salads. It has chard, kale and spinach. Or, you can just use one leafy veggie.)
  • 1 avocado
  • handful of chocolate chips, plus more to sprinkle on top

*Now, if you’re the “stay away from sugar” type, you could just go with these ingredients and be fine. But the kids and I thought it needed to be a bit sweeter, so we added:

  • 2 tablespoons chocolate syrup
  • 1 tablespoon sugar
  • 2 tablespoons unsweetened cocoa
  • 4 cups ice


  • If using a Vitamix, put ingredients in blender in the order listed. If using another brand of blender, put in as you see fit.
  • Turn on high, and let blend until you get an ice cream consistency. If you like it a bit more solid, freeze before eating.
  • Scoop out, and then sprinkle more chocolate chips on top, and enjoy!

  1. I got to sample Alex’s chocolate mix. She’s a Vitamix genius! The result is more granata than ice cream, but delish nevertheless.
