A couple weeks ago I made a call-out to Breezy Mama readers that if they had a favorite Go-To recipe they’d like to share, by all means, send it on in. Cheryl answered with this recipe for pumpkin bread. She says, “This is the best Pumpkin bread recipe I know. I love everything pumpkin so I was really excited when my friend made it for me last year. As soon as the weather started to turn and canned pumpkin was back on the shelf, I dug out this recipe and started baking. Everyone in my family looks forward to the loaf pans coming out of the oven!”
Makes two loaves.
- 3 C flour
- 3C sugar
- 2 t baking soda
- ½ t baking powder
- 1 t salt
- 1 t allspice
- 1 t cinnamon
- 1 c oil
- 4 eggs
- 2/3 c water
- 1 (16 oz) can pumpkin
- 1 (12 oz) bag semisweet chocolate chips
- Heat oven to 325 degrees
- Mix all ingredients, except pumpkin and chocolate chips. Blend well, fold in pumpkin and chocolate chips.
- Pour batter into greased and floured bread pans
- Bake for 1 hour, or until toothpick comes out clean
