Delish Dish: Herb Roasted Halibut

top_chefTwo things people close to me know: I’m not exactly a wiz in the kitchen (I anxiously await Alex’s easy to do recipes every Sunday like everyone else) and I hate fish. However, recently I got to try this halibut recipe prepared by three former Top Chef finalists to promote the show’s 6th season Top Chef: Las Vegas and it was DELICIOUS! It’s no wonder Emmy-nominated host Padma Lakshmi told Breezy Mama she gains weight every season. “They actually have two different dress sizes for me,” she dished. “I go up a size by the end of each season.”

Not to worry, though – it’s a light dish and surprisingly easy to do (they were given only 20 minutes to prepare it in a Quickfire challenge). Make just the halibut (yum!) or I included the side dishes and garnish recipes if you are ready to go all out. Remember, they had to do the whole meal in 20, so you can, too, if you want to for the halibut (that’s a bad pun the hubby and I have been making all week). Get cookin’!

Yields 4 servings

Halibut and Marinade
(4) 4-ounce portions of Halibut
1 tbsp minced thyme
1 minced clove of garlic
2 tbsp extra virgin olive oil
1/2 tsp minced marjoram
pinch of crushed chili
1/8 tsp salt
1/8 black pepper

1) Add olive oil, chilis, thyme, marjoram, garlic, salt and pepper to halibut and marinate in refrigerator for at least 30 minutes.

2) Heat grill pan to medium/high heat and add marinated halibut to grill. Grill the fish on both sides for at least 4-5 minute on each side, or to your liking.



1/2 cup lump crab meat
1 cup halved cherry tomatoes
1/2 cup minced red onions
1/2 cup blanched romano beans
1 cup blanched and shucked corn
4 tbsp minced chives
1 tsp minced fresh thyme
1 tbsp minced flat leaf parsley
4 tbsp extra virgin olive oil
Juice of one lemon
1 tsp sherry vinegar
salt and pepper to taste

1) In a medium bowl, mix corn, cherry tomatoes, diced red onion, romano beans, chives, thyme, parsley, lemon juice, vinegar, olive oil, salt and pepper. Once mixed, gently fold in crab and refrigerate.

1 tbsp butter
1 tbsp extra virgin olive oil
1/2 minced yellow onions
1/2 cup minced fennel
1 cup of corn
1/2 cup milk
1/2 vegetable stock
1 cup cream

1) In a small sauce pot, sweat onions, fennel, and corn in olive oil and butter until onions are tender (8-10 minutes). Add milk, vegetable stock, and cream, bring this all to a boil and simmer for 15 minutes. Puree, strain and season with salt and set aside.

1/2 cup crème fraiche
1 tsp minced marjoram
salt and pepper to taste
small bunch upland cress (herb)

1) To make the garnish, add minced marjoram, crème fraiche, salt and pepper to a small bowl. Mix and season, set aside.

Putting It All Together:

1) To plate, add corn sauce to the base of plate, add a nice heaping mound of succotash and top with halibut and garnish with crème fraiche and shaved fennel.
