My mom is famous for putting weird things together and making them taste wonderful. When I was in elementary school I would be teased mercilessly for the kind of sandwiches that would be in my Charlie’s Angels lunchbox–cream cheese and chopped black olives or peanut butter, pickle and mayonnaise (yes, you read that right) to name a few. They sound gross, but actually taste good. This salad is a prime example–baked beans, onion, cucumber and mayo–who would think yum after reading that? But YUM it is. Make this for your next potluck and it will be the first dish to be finished–trust me.
Mommy’s Baked Bean Salad
1 can (16 oz) original flavor baked beans
1 onion, finely chopped
1 cucumber, peeled, seeded, and diced
2 spoonfuls of mayonnaise
salt and pepper to taste
Rinse and drain the baked beans. Pick out the piece of bacon that comes in the can. Combine beans, cucumber, and onion. Mix in mayonnaise–it should lightly coat the ingredients. Shake in some salt and pepper. Ta-Da! You are done. Go enjoy your day.
