Baked Bean Salad—a sure winner at your next potluck

pic108643773721My mom is famous for putting weird things together and making them taste wonderful. When I was in elementary school I would be teased mercilessly for the kind of sandwiches that would be in my Charlie’s Angels lunchbox–cream cheese and chopped black olives or peanut butter, pickle and mayonnaise (yes, you read that right) to name a few. They sound gross, but actually taste good. This salad is a prime example–baked beans, onion, cucumber and mayo–who would think yum after reading that? But YUM it is. Make this for your next potluck and it will be the first dish to be finished–trust me.

Mommy’s Baked Bean Salad

Ingredients:

1 can (16 oz) original flavor baked beans

1 onion, finely chopped

1 cucumber, peeled, seeded, and diced

2 spoonfuls of mayonnaise

salt and pepper to taste

Directions:

Rinse and drain the baked beans. Pick out the piece of bacon that comes in the can. Combine beans, cucumber, and onion. Mix in mayonnaise–it should lightly coat the ingredients. Shake in some salt and pepper. Ta-Da! You are done. Go enjoy your day.

    I beg to differ with the appelation “weird” in reference to what I fed the family, but am flattered that things tasted wonderful! To give correct credit, the baked bean salad was originally made by my Meridian, Mississippi neighbor, Ruth, who is from South Carolina (maybe that accounts for the BBQ bean aspect?). I think chop, rather than dice, the cukes gives them a better crunch that stands up to the beans.

    Alex’s Grandmommy Cushman gets credit for the peanut butter and pickle sandwich- and don’t forget the mayo OR the lettuce! I also was an unbeliever, but quickly converted with the first taste.
