Now that you’ve had your fill of candy (who says that Trick or Treating is all about the kids?) you may want to cook something on the healthier side for dinner tonight. Enter today’s Delish Dish, which comes to us from Breezy Mama Kristine. She brought this over to us after Emily was out of the hospital, and it was an instant hit with the entire family–kids included. Ingredients:
- 1 tbsp olive oil
- 3 1/2 cups vegetable broth
- 1/2 cup tomato juice
- 1/2 cup dry white wine
- 6 shallots, finely chopped
- 4 medium zucchini, chopped

Number two of Breezy Mama’s Hospital Series is this scrumptious dish using quinoa as it’s main ingredient. If you haven’t heard of quinoa, don’t worry, I didn’t know too much about it either. Apparently, it’s super easy to cook, and though it may remind you of rice, it’s not, in fact it’s much healthier. Deanna, who made this recipe for my family, has this to say, “The dish we prepared for you is a really easy one to prepare and good for you as well. The quinoa is a complete protein and I am using it in place of rice and pasta on occasion. You can get these items at any grocery store but I bought everything you see below from Trader Joe’s (with the exception of the veggies-I get them from an organic farm–I think they hold so much more flavor.)
Now, don’t be afraid to try it–my family is a family of white rice lovers–(my husband is Japanese after all) and he was even convinced on the deliciousness of quinoa. Read More…
