Delish Dish: Greek Cabbage Salad

I recently posted my Grandmother’s chili recipe that I love to cook for occasions when you need to fill a lot of tummies and don’t want to spend much time in the kitchen. What’s always accompanying the chili? This salad. Originally the recipe from two old friends, Breezy Mama Jenny and her twin, Sarah, I always pull it out of my back pocket when I need some greens, quick. –Alex

Serves 6

Ingredients:

  • One head of cabbage, diced
  • One cucumber, peeled and sliced
  • One bunch, green onions, chopped
  • 4 0unce package of feta, traditional flavor, crumbled (I like to buy the block and crumble it myself)
  • 1/4 cup olive oil
  • 1/8 cup rice wine vinegar (green cap), plus a dash more
  • 1 teaspoon salt

Directions:

  • Mix all greens in a bowl. Pour wet ingredients on top, and toss. All done!

I love this recipe – reminds me of our summer dinners on Chestnut with the girls way back when. I just made this last night for dinner to take to our friends who just had a baby… It was delish and I paired it with a super simple apricot glazed chicken recipe from Cooking Light and rice pilaf. Super yum. Thanks for posting this.
