Delish (Side)Dish: Cauliflower with Coconut

Have you had enough turkey and stuffing and want something completely different? Then try this dish. A couple years ago my parents went on a trip to India. India wasn’t one of their top tourist destinations, but, everything fell together perfectly and they decided to go for it. They went as part of a tour group, and at one point, my parents chose to break away and head south to Kerala (think the first few scenes of The Bourne Supremacy). No one else wanted to do it, others warned them against it, and it was the best decision they made. They rented a guided boat, complete with personal chef, which took them through the Backwaters of Kerala. My parents loved it, and looking back, it was one of their favorite parts of the trip. This recipe comes from that boat trip–quantities are vague, because it was given by mouth and there was a bit of a language barrier. –Alex
Ingredients:
- 2 tablespoons butter
- 1/2 yellow onion, diced
- 1 teaspoon mustard seed
- 1/2 of a cauliflower, cut in smallish pieces
- 1/4 teaspoon turmeric (I use a bit more, until I get a really good yellow color)
- 1 cup shredded coconut (The recipe calls for unsweetend, but I use baking coconut and like the sweeteness it adds).
- Dash of salt
Directions:
- Heat butter in frying pan, add onion and mustard seed. Cook until onion is clear.
- Add cauliflower.
- Add turmeric and the salt. Again, it should be quite yellow.
- Cook until cauliflower is to your liking.
- Add the coconut into the mixture. You want the coconut to be crunchy, so the minute it’s hot, it’s ready.

Good post. I’m always looking for ways to branch out, especially when it comes to tough veggies like cauliflower. It’s also fun to remember a trip with your senses

I agree–I find that when I’m using cauliflower I’m usually just pureeing it and hiding it in other things. It’s yummy in the dish above!
Alex, you got the recipe just right. Don’t forget, you can substitute shredded cabbage for the cauliflower, and it’s just as good. We had it both ways while floating around the Kerala Backwaters.
