Delish Dish: Ceasar Salad

ceasarsalad4My husband is a Caesar Salad connoisseur–that and a bowl of clam chowder are hands down two of his most favorite things. Point being–the man knows his Caesar Salad. So when Breezy Mama Jenelle brought us a Chicken Caesar Salad for dinner one night and Bowen couldn’t stop talking about how delicious it was, I knew we had ourselves a winning recipe. What makes it stand apart from the rest is how lemony it is. Originally a Martha Stewart recipe, Jenelle adapted it by adding dill and some onion. Throw in some grilled chicken, and you have yourselves a scrumptious meal.

Ingredients:

  • 1/4 c fresh lemon juice
  • 1/4 c reduced fat mayo
  • 1/4 c grated Parmesan cheese
  • 2 anchovy fillets coarsely chopped (opt.)
  • 1 small garlic clove

*Jenelle also added: 1 tsp of dried dill and 1/2 chopped onion to the blender

Directions:

Put ingredients in the blender and blend until smooth.
