Delish Dish: Zucchini Risotto with Sun-Dried Tomatoes–part of Breezy Mama’s Hopsital Series
Now that you’ve had your fill of candy (who says that Trick or Treating is all about the kids?) you may want to cook something on the healthier side for dinner tonight. Enter today’s Delish Dish, which comes to us from Breezy Mama Kristine. She brought this over to us after Emily was out of the hospital, and it was an instant hit with the entire family–kids included. The recipe comes from a Weight Watcher’s cookbook; look at the end of the post for more information.
Ingredients:
- 1 tbsp olive oil
- 3 1/2 cups vegetable broth
- 1/2 cup tomato juice
- 1/2 cup dry white wine
- 6 shallots, finely chopped
- 4 medium zucchini, chopped
- 16 sun-dried tomatoes (not oil-packed), finely chopped (use kitchen shears)
- 1/2 cup chopped parsley
- 1 tbsp chopped fresh marjoram or 1/2 tsp dried
- 1 1/3 cups arborio rice
- 1/2 cup chopped parsley
- 2 tbsp grated parmesan cheese
- salt and pepper to taste
- chopped parsley to garnish
Directions:
- Combine the broth and tomato juice in a saucepan over medium-high heat. Bring it to a boil and then reduce heat. Keep at a simmer.
- Heat the oil over medium heat in a large pan. Add the shallots and cook for 2 minutes until softened. Add the zucchini and cook until heated through, 5 minutes.
- Add the rice, wine, sun-dried tomatoes and parsley, and stir until wine is absorbed.
- Add 1/2 cup of the heated broth/juice combo to the pot and stir constantly until the liquid is absorbed by the rice and veggies. When it is, add another 1/2 cup and repeat.
- Continue adding broth, 1/2 cup at a time, stirring until the broth is completely absorbed, before adding more, until the rice is just tender. The total cooking time is about 25-30 minutes. Stir in the cheese and pepper, serve at once, garnished with parsley.
