Delish Dish: BBQ Chicken Sandwiches–The Ultimate Monday Night Football Meal

Part Three of Breezy Mama‘s Hospital Series comes from Breezy Mama Vanessa. Knowing that my husband is a football fan, she brought dinner over to us on Monday night–and made sure that the fare would go well as we ate in front of the TV to watch the game. Vanessa didn’t go wrong–served with french fries, a side salad and a nice microbrewed beer, the meal was scrumptious. Even better–the meal is made in the crock-pot so it’s easy to do.
Ingredients:
- Ciabatta Rolls- will fill about 12 (they come in 6 packs at Trader Joes) OR any other really good roll
- Sharp Cheddar- 1 slice for every sandwich you are making
- 4 boneless/skinless chicken breasts, frozen or fresh (will feed 4-6 adults)
- 1 Bottle-Trader Joes All Natural BBQ Sauce (or your favorite kind)
- ½ 16oz. can Chicken Broth
- 1 garlic glove, minced
- 1 tsp. Worcestershire Sauce
- 1 Tblsp BBQ seasoning (optional)- makes the sauce have a richer flavor
- Pepper to taste
- 1 Tblsp Sugar
- 3 Tblsp Mango Chutney (optional)- this makes the sauce a little sweeter and takes a little of the spiciness out
Directions:
- Mix together all ingredients (from BBQ sauce down) and pour over chicken in crock-pot. Set on High for 4 to 4 ½ hours.
- Take out chicken, shred it- easy to do with 2 forks and when chicken is hot.
- Either put shredded chicken back in with sauce or add a little sauce to shredded chicken to moisten and keep the rest on the side to dip sandwiches.
