Delish Dish: Quinoa, Shrimp and Veggie Stir-fry
Number two of Breezy Mama’s Hospital Series is this scrumptious dish using quinoa as it’s main ingredient. If you haven’t heard of quinoa, don’t worry, I didn’t know too much about it either. Apparently, it’s super easy to cook, and though it may remind you of rice, it’s not, in fact it’s much healthier. Deanna, who made this recipe for my family, has this to say, “The dish we prepared for you is a really easy one to prepare and good for you as well. The quinoa is a complete protein and I am using it in place of rice and pasta on occasion. You can get these items at any grocery store but I bought everything you see below from Trader Joe’s (with the exception of the veggies-I get them from an organic farm–I think they hold so much more flavor.)
Now, don’t be afraid to try it–my family is a family of white rice lovers–(my husband is Japanese after all) and he was even convinced on the deliciousness of quinoa.
Total time: 20 min.
Serves 6-8
Ingedients:
- 1 box of quinoa (2 cups)
- 4 cups of water
- 2 bags of uncooked large shrimp
- 2 zucchini
- 2 yellow squash
- 2 tbs. olive oil
- 1 jar of sun-dried tomatoes in olive oil
- fresh ground sea salt and pepper
- Italian herb seasoning
Directions:
- Thaw shrimp according to instructions on the bag.
- Boil water. Add quinoa, bring to a boil and simmer until quinoa is tender (about 10 min.)
- Chop zucchini and yellow squash into bite sized pieces. In a large skillet ( I use my 5.5 quart skillet) saute veggies in olive oil until slightly tender (about 4 minutes). Peel and chop uncooked shrimp into bite sized pieces and add to veggies. Saute shrimp and veggies together for about 3 min or until shrimp is tender and cooked. Add cooked quinoa to veggie and shrimp and pour sun-dried tomatoes (do not drain them) over entire mixture. I add about 2 more tablespoons of olive oil, salt and pepper and Italian herb seasoning to taste.

The leftovers make a great lunch as well!

My sister starting eating quinoa this summer after a recommendation from a nutritionist and she loves it. Looks like I should try it.
This recipe has ALL of my favorite ingredients! In fact, I just bought quinoa, squash and shrimp yesterday at the store. I think I was meant to try this recipe. Trying it tonight!
I love this dish. I cook the quinoa in veggie or chicken stock for more flavor and add kalamata olives and crumbled feta. One of my favorites!!
