Breezy Mama Pam first made this for me during the BKY (Before Kids Years), back when we were up at 2 in the morning because we wanted to be. Eventually, I met my husband and this quickly became his favorite! It’s super easy and if you use the low-fat chicken sausage from Trader Joe’s (for those lucky to have one near you, or try a Whole Foods or even your local grocery store), it is actually pretty low fat.
Ingredients:
1 package chicken sausage
1 12 oz Tzatziki Sauce sauce (*note: this is a Greek yogurt sauce made with cucumbers and fresh mint. For sure available at Trader Joe’s and Whole Foods, but if you can’t find it at your local grocery, click here for an easy recipe)
1 package Flat Bread
1 bellpepper
1 onion
To make:
- Spray a frying pan with Pam cooking spray
- Chop the sausage, bellpeppers and onions and cook until veggies are soft and sausage is browned.
- Heat the flat bread in the toaster oven
- Spread the heated flat bread with the Tzatziki Sauce sauce
- Fold bread like a taco shell and pour in sausage, bellpepper and onion
- Pour some more Tzatziki Sauce sauce on top
Add a side salad and you are good to go!

Many new parents can easily get suckered into thinking that if they don’t start their child in a music class by 5 months of age, she will already be behind all the other babies. Sure, it may sound crazy, but conscientious parents are just listening to claims such as “music helps brain development!” Speaking from experience however, walk into any music class for babies and notice lots of happy little ones lying on their backs, cooing to their mothers and/or fathers and occasionally shaking maracas off beat when they aren’t trying to suck on them to help with teething – little Albert Einsteins in the making!
What signing up for classes with your baby WILL do, is get you out of the house – a regularly scheduled and paid for class could be the extra motivation you need—and interacting with other parents. A little adult conversation will likely boost your spirits and in the end help you be better suited to give your child the love she needs. Being the daughter of a teacher, I always loved the last day of school—as young kids my brother and I would eagerly gather around my mom to see what she received (and what we would get) as a parting gift from her students. There were great gifts and bad gifts—the latter of which we would selfishly groan about: “Chocolate covered cherry cordials? A whole pack? Who eats that?!” or “A silk rose?!? Really, that’s it, a silk rose?!?” So, now that my son’s first year of preschool is coming to a close, the beads of sweat have already begun to form on my neck. What will I get his teachers? It has to be GOOD—I don’t want their families gathering around my present, groaning. And I know I’m not alone here; getting your child’s teacher’s gift has to rank up there amongst most stressful things to do. So, I’ve taken it upon myself to poll a dozen different teachers, all in different school districts, private and public, preschool and elementary, to see what they enjoy receiving. I’ve also included the Do Not of Gift Giving so you know how to spend your money wisely–no use in buying a present that won’t get used. Cindy from the Pampered Chef sent Breezy Mama her recipe for:
Italian Chicken Pasta Toss
Ingredients:
6 oz uncooked bow tie pasta (about 2 1/2 cups)
2 plum tomatoes
1 small onion
1 medium zucchini
1 small red or yellow bell pepper
8 oz boneless, skinless chicken breasts
2 tsp olive oil
2 garlic cloves, pressed
1/2 cup frozen peas
1 tsp Italian seasoning mix
1 tsp salt
Grated fresh parmesan cheese (optional)
Directions:
1. Cook pasta according to package directions. Drain and keep warm.
2. Dice tomatoes, chop onion, and slice zucchini into 1/2 inch thick pieces.
Cut bell pepper into thin strips and cut chicken crosswise into 1/2 inch
strips.
3. Heat oil in skillet over medium-high heat 1-3 minutes or until
shimmering. Press garlic into skillet using garlic press. Add chicken.
Cook and stir 4-5 minutes or until chicken is no longer pink. Add onion,
zucchini, bell pepper, peas, seasoning mix and salt; cook 2 minutes. Add
tomatoes and cook 1-2 minutes, stirring gently until heated through. Remove
skillet from heat and stir in pasta. Serve with parmesan cheese, if
desired.
